Kalamata olives originate from the famous Kalamata region of Greece. They are plump, fleshy olives that are full in flavor with a natural blackish-brown color and a slightly softer texture when they ripen on the tree.  They have a natural color variation with sunlight exposure being an important factor.  Sunlight exposure adds to the darker color.
